Description

A refreshing and delicious Summer Berry Poke Cake, perfect for warm weather gatherings.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 cup sweetened condensed milk
  • 1 cup whipped topping (like Cool Whip)
  • Additional berries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  3. Add the softened butter, milk, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until smooth.
  4. Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  5. Remove the cake from the oven and let it cool in the pan for about 10 minutes.
  6. Using the handle of a wooden spoon, poke holes all over the top of the cake, about 1 inch apart.
  7. In a separate bowl, mix the sweetened condensed milk with the mixed berries. Pour this mixture evenly over the cake, making sure it seeps into the holes.
  8. Allow the cake to cool completely, then refrigerate for at least 2 hours to let the flavors meld.
  9. Before serving, spread the whipped topping over the cake and garnish with additional berries.

Notes

  • For a lighter version, substitute the sweetened condensed milk with a mixture of Greek yogurt and a bit of honey.
  • You can also use a sugar-free whipped topping for fewer calories.
  • For added flavor, consider adding a splash of lemon juice to the berry mixture before pouring it over the cake.
