Ingredients
- 4 cups kale, stems removed and chopped
- 2 ripe peaches, sliced
- 1 cup fresh blueberries
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced almonds
- 1/4 cup red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped kale and sliced peaches. Massage the kale gently with your hands for about 1-2 minutes to soften it.
- Add the fresh blueberries, crumbled feta cheese, sliced almonds, and red onion to the bowl with the kale and peaches.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to combine all the ingredients.
- Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
