Ingredients
- 2 large sweet potatoes, peeled and diced into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 1 tablespoon honey or maple syrup
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped (for garnish)
- 1/4 cup crumbled feta cheese (optional, for garnish)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the diced sweet potatoes, olive oil, chili powder, cumin, smoked paprika, cinnamon, cayenne pepper, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.
- Remove from the oven and drizzle with honey or maple syrup and lime juice. Toss gently to combine.
- Serve warm, garnished with fresh cilantro and crumbled feta cheese if desired.

- For added crunch, sprinkle some chopped pecans or walnuts over the sweet potatoes before roasting.
