  • 2 large sweet potatoes, peeled and diced into 1-inch cubes
  • 2 tablespoons olive oil

  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 1 tablespoon honey or maple syrup
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 1/4 cup crumbled feta cheese (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the diced sweet potatoes, olive oil, chili powder, cumin, smoked paprika, cinnamon, cayenne pepper, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet.
