Description

A delicious and easy recipe for Sweet Baby Ray’s Crockpot Chicken, perfect for BBQ sandwiches or served over rice.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup Sweet Baby Ray’s BBQ sauce
  • 1/2 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (optional)
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. In a bowl, mix together the Sweet Baby Ray’s BBQ sauce, chicken broth, Worcestershire sauce, garlic powder, onion powder, black pepper, and salt.
  3. Pour the sauce mixture over the chicken in the crockpot, ensuring the chicken is well coated.
  4. If using, drizzle olive oil over the top for added flavor and moisture.
  5. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  6. If you prefer a thicker sauce, mix the cornstarch with water in a small bowl until smooth, then stir it into the sauce in the crockpot during the last 30 minutes of cooking.
  7. Once cooked, shred the chicken with two forks and stir it into the sauce before serving.

Notes

  • For added flavor, try marinating the chicken in the BBQ sauce overnight before cooking.
  • You can also substitute the chicken with pork or beef for a different twist on this dish.
  • Serve the chicken on buns for BBQ sandwiches or over rice for a hearty meal.
