Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish, optional)

Instructions

  1. Combine honey, soy sauce, ketchup, apple cider vinegar, minced garlic, ground ginger, and black pepper in a mixing bowl to form a marinade.
  2. Place the chicken thighs into the marinade, ensuring they are thoroughly coated. Cover and let marinate in the refrigerator for at least one hour, or overnight for enhanced flavor.
  3. Heat a grill or large skillet over medium-high heat and add vegetable oil.
  4. Remove the marinated chicken from the bowl, setting aside the marinade for later use. Cook the chicken for approximately 6-7 minutes on each side, or until it reaches an internal temperature of 165°F.
