A delightful pie combining the sweetness of strawberries and the tartness of rhubarb, perfect for dessert lovers.
Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 2 cups rhubarb, chopped into 1-inch pieces
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon butter, cut into small pieces
- 1 package (14 oz) refrigerated pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large mixing bowl, combine the sliced strawberries, chopped rhubarb, sugar, cornstarch, salt, vanilla extract, and lemon juice. Stir gently until the fruit is well coated. Let the mixture sit for about 15 minutes to allow the juices to release.
- Roll out one pie crust and fit it into a 9-inch pie pan. Trim the edges, leaving about a 1-inch overhang.
- Pour the strawberry-rhubarb filling into the crust, spreading it evenly. Dot the filling with small pieces of butter.
- Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal the pie. Cut a few slits in the top crust to allow steam to escape.
- Brush the top crust with the beaten egg for a golden finish.
- Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
- Remove the pie from the oven and let it cool for at least 2 hours before serving to allow the filling to set.
Notes
- For a deeper flavor, add 1 teaspoon of cinnamon or nutmeg to the filling.
- Serve the pie warm with a scoop of vanilla ice cream or whipped cream for a delicious dessert.
