Instructions
Step 1: Prepare the Homemade Croutons
- Preheat your oven to 180°C (350°F).
- Cut the sliced bread into small cubes.
- Spread the bread cubes on a baking sheet and drizzle lightly with olive oil.
- Season with salt, black pepper, smoked paprika, and Herbs of Provence. Toss well to coat evenly.
- Bake for 10-15 minutes or until golden and crisp. Remove and let cool.
Step 2: Make the Broccoli Dish
- Heat olive oil in a large pot over medium heat.
- Add the minced garlic and chopped onion. Sauté until the onion becomes translucent.
- Stir in the chopped carrot and potatoes. Cook for 3-4 minutes, stirring occasionally.
- Add the chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the vegetables are tender.
- Use an immersion blender to blend the soup into a smooth, creamy consistency. Alternatively, use a regular blender in batches.
- Stir in the cream, then season with salt and black pepper to taste. Heat gently, but do not boil.
Step 3: Serve and Garnish
- Ladle the broccoli mixture into serving bowls.
- Sprinkle each bowl with grated Parmesan cheese and freshly chopped parsley.
- Top with homemade croutons for added crunch and flavor.
Notes
- For extra creaminess, add a splash of milk or more cream when blending.
- If you like your soup chunkier, blend only half of the mixture and leave the rest intact.
- Customize the croutons by using different seasonings, such as chili powder, garlic powder, or dried oregano.
