Ingredients

  • 1 lb diced raw chicken
  • 2 cups instant rice
  • 3 cups frozen mixed vegetables (carrots, peas, broccoli, etc.)
  • 1 cup teriyaki sauce
  • 2 tbsp vegetable oil
  • 1 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

1. Preheat the Oven

  • Set your oven to 375°F (190°C).
  • Lightly grease a large casserole dish with cooking spray or oil.

2. Marinate the Chicken

  • In a bowl, mix diced chicken with ½ cup teriyaki sauce, garlic powder, salt, and pepper.
  • Let it marinate for 5 minutes while preparing the rice.

3. Cook the Chicken

  • Heat vegetable oil in a skillet over medium-high heat.

  • Remove from heat.

4. Prepare the Rice

  • Cook the instant rice according to package instructions.

5. Combine Ingredients

  • In the prepared casserole dish, mix together cooked chicken, prepared rice, frozen mixed vegetables, and the remaining ½ cup of teriyaki sauce.
