Fresh, flavorful, and quick to prepare, these Thai Chicken Lettuce Wraps are the perfect light meal. Ground chicken is sautéed with garlic, ginger, and colorful vegetables, then wrapped in crisp lettuce leaves and topped with fresh herbs and peanuts for a fun, customizable dinner.
Ingredients
- 1 pound ground chicken
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, diced
- 1 cup shredded carrots
- 1/4 cup soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1/2 teaspoon red pepper flakes (optional)
- 1 head butter or romaine lettuce, leaves separated
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- Chopped peanuts, for garnish (optional)
Instructions

Sauté Aromatics
Heat oil in a large skillet over medium heat. Add chopped onion and cook for 3 minutes until soft. -
Cook the Chicken
Add garlic and ginger, cook for 1 minute. Increase heat to medium-high and add ground chicken. Cook 5–7 minutes, breaking it apart, until fully cooked and browned. -
Add Veggies
Stir in red bell pepper and shredded carrots. Cook for 2–3 minutes until tender. -
Add Sauce
In a small bowl, mix soy sauce, fish sauce, lime juice, brown sugar, and red pepper flakes (if using). Pour over the chicken mixture and stir to coat. Cook for another 2 minutes. -
Finish with Herbs
Remove from heat. Stir in chopped cilantro and green onions.

Assemble & Serve
Spoon chicken mixture into lettuce leaves. Top with chopped peanuts, if desired. Serve immediately.
