Turn your Thanksgiving leftovers into something new and delicious with these Thanksgiving leftover turkey & stuffing muffins. Packed with savory stuffing, tender turkey, and a touch of gravy, these muffins are golden and crispy on the outside, soft and flavorful on the inside. Perfect as a snack, breakfast, or even an appetizer, they’ll keep the spirit of Thanksgiving alive long after the feast is over!

Ingredients

  • 23 cups of cooked stuffing (leftover from Thanksgiving)
  • 12 cups of cooked turkey, chopped into bite-sized pieces
  • 1 large egg, whisked
  • 1 cup of prepared turkey gravy (plus extra for serving if desired)

Instructions

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Lightly grease a muffin tin to prevent sticking.

2. Combine the Ingredients:

  • In a large mixing bowl, combine the cooked stuffing, chopped turkey, and whisked egg.
  • Stir until the mixture is evenly moistened and slightly holds together when pressed.

3. Fill the Muffin Tin:

  • Spoon the mixture into the prepared muffin tin.
  • Press down gently to pack each cup evenly for uniform muffins.

4. Bake the Muffins:

  • Place the muffin tin in the oven and bake for 20–25 minutes, or until the tops are golden brown and crispy.

5. Serve with Gravy:

  • Remove the muffins from the oven and let them cool slightly before removing them from the tin.
  • Serve warm with a drizzle of turkey gravy on top, or use the gravy as a dip on the side for added flavor.

Notes

  • Leftover Creativity: Add in chopped roasted vegetables, cranberries, or shredded cheese to customize the muffins.
  • Storage: Keep leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain their crispy edges.
  • Freezer-Friendly: Freeze baked muffins for up to 3 months. Thaw and reheat in the oven or microwave before serving.
  • Alternative Toppings: Pair with cranberry sauce or a dollop of mashed potatoes for a new flavor twist.
