Ready in just 30 minutes, it’s ideal for busy weeknights or a special dinner. The best part? It’s a one-pan meal with minimal cleanup that still delivers restaurant-quality flavors!

Ingredients

For the Pasta and Sauce:

  • 8 ounces uncooked spaghetti (or pasta of choice)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 10 ounces grape tomatoes, halved
  • ¼ cup chicken broth (or dry white wine)
  • ¼ teaspoon Italian seasoning
  • Salt and black pepper to taste

For the Shrimp and Spinach:

  • 1 pound uncooked shrimp (peeled, deveined)
  • 2 cups fresh baby spinach, packed

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the spaghetti according to package directions until al dente.
  3. Reserve ½ cup pasta water before draining.

Step 2: Sauté the Aromatics

  1. In a large skillet, heat olive oil and butter over medium-high heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.

Step 3: Simmer the Sauce

  1. Stir in the grape tomatoes, chicken broth, and Italian seasoning.
  2. Cook for 5 minutes, stirring occasionally, until the tomatoes soften.

Step 4: Cook the Shrimp and Spinach

  1. Reduce heat to medium and add the shrimp to the skillet.
  2. Stir in the fresh spinach.
  3. Cook for 5 minutes, stirring occasionally, until the shrimp turn pink and opaque and the spinach wilts.

Step 5: Combine Everything

  1. Toss the cooked pasta into the skillet with the shrimp mixture.
  2. If needed, add reserved pasta water to loosen the sauce.
  3. Season with salt and black pepper to taste.
  4. Serve immediately and enjoy!

Notes

  • White wine adds depth, but chicken broth works as a great substitute.
  • Cook shrimp just until pink to avoid a rubbery texture.
  • Al dente pasta absorbs the sauce better and prevents a mushy texture.
  • Reserve pasta water to create a silky, well-coated sauce.
