- ¾ cup (150g) granulated sugar
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 large egg
- ½ teaspoon pure vanilla extract
- 2 teaspoons baking powder
- 3 tablespoons whole milk
Instructions
Step 1: Prepare the Sweet Potatoes
- Preheat your oven to 350°F (175°C).
- Place the cubed sweet potatoes in a large pot, cover with water, and bring to a boil.
- Cook until fork-tender, about 15–20 minutes.
- Drain the sweet potatoes and allow them to cool slightly.
- Mash thoroughly until smooth and set aside.
Step 2: Prepare the Pie Crust
- Roll out the all-butter pie crust and fit it into a 9-inch pie dish.
- Trim excess dough and crimp the edges for a decorative finish.
- Place the crust in the refrigerator to chill while preparing the filling.
Step 3: Make the Sweet Potato Filling
- In a large mixing bowl, beat the softened butter and granulated sugar together until well combined.
- Add the mashed sweet potatoes, cinnamon, nutmeg, salt, egg, vanilla extract, baking powder, and milk.
