Ingredients
Main Ingredients
- 1 (5-ounce) can tuna (no-salt-added, water-packed, drained)
- ½ cup canned white beans (no-salt-added)
- ¼ cup celery, minced
- ¼ cup pickled red onion, minced
- 3 tablespoons reduced-fat mayonnaise
- 2 tablespoons sweet pickle relish
- 1 tablespoon fresh dill, minced
- 1 tablespoon fresh chives, minced
- 2 teaspoons non-pareil capers, minced
- ½ teaspoon freshly ground black pepper
For the Sandwich
- 2 tablespoons unsalted butter, at room temperature
- 4 slices whole-wheat bread (1-ounce each)
- 2 slices cheddar cheese (1-ounce each)
Instructions
- Prepare the Tuna and White Bean Mixture
In a medium bowl, combine the drained tuna and white beans. Use a fork to mash them together until they form a cohesive mixture. - Add the Flavor Boosters
Fold in the minced celery, pickled red onion, mayonnaise, sweet pickle relish, dill, chives, capers, and black pepper. Mix well to combine. Taste and adjust the seasoning as needed. - Assemble the Sandwiches
Spread ½ tablespoon of butter on one side of each slice of bread. Flip two slices so the unbuttered side is facing up. Spread half of the tuna mixture onto each slice. Top with a slice of cheddar cheese, then place the remaining slices of bread on top, buttered-side up. - Cook the Sandwiches
Heat a large skillet over medium heat. Place the sandwiches in the skillet and cook undisturbed for 2–3 minutes per side, or until the bread is golden brown and the cheese is fully melted. - Serve and Enjoy
Slice the sandwiches in half and serve immediately. Pair with a simple salad or a cup of soup for a complete meal.
Notes
- Use Fresh Bread: Whole-wheat bread that’s soft but sturdy works best for this sandwich.
- Shred Your Own Cheese: Freshly grated cheddar melts better and tastes fresher.
- Balance the Flavors: Adjust the amount of relish, capers, and pickled onions based on your taste preferences.
- Cook Over Medium Heat: This helps the bread brown evenly and ensures the cheese melts without burning the bread.
