Ingredients
- 4 ounces carrots, grated (about 2 medium)
- 4 ounces potatoes, grated (about 1 medium)
- 4 ounces zucchini, grated (about 1 medium)
- 5.5 ounces onions, finely chopped (about 1 medium)
- 3 eggs
- 2–3 cloves garlic, minced
- 2 tablespoons vegetable oil (for cooking)
- 1 teaspoon salt
- Black pepper, to taste
Instructions
1. Prepare the Vegetables
- Peel and grate the carrots and potatoes.
- Grate the zucchini, then squeeze out any excess moisture using a clean kitchen towel or paper towel.
- Finely chop the onion.
- Mince the garlic cloves.
2. Combine the Ingredients
- In a large mixing bowl, combine the grated carrots, potatoes, zucchini, chopped onions, and minced garlic.
- Add the eggs, salt, and black pepper to taste.
- Mix well until all the ingredients are fully incorporated.
3. Form the Patties
- Using your hands or a spoon, scoop the mixture and shape it into small, palm-sized patties.
- Place the formed patties on a plate, ready to cook.
4. Cook the Patties
- Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.
- Add the patties to the skillet in batches, being careful not to overcrowd the pan.
- Cook for 4–5 minutes on each side until golden brown and cooked through.
5. Drain and Serve
- Remove the patties from the skillet and place them on a plate lined with paper towels to drain any excess oil.
- Serve hot with your favorite dipping sauce, or use as a filling for sandwiches, wraps, or burgers.
