Ingredients

  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup diced bell peppers (any color)
  • 1 cup chopped spinach
  • 1 cup diced tomatoes (fresh or canned, drained)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced zucchini
  • 1/2 cup cooked and crumbled sausage or bacon (optional)
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat the oven to 350°F. Grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.
  3. Add the diced bell peppers, chopped spinach, diced tomatoes, shredded cheddar cheese, diced onion, diced zucchini, and cooked sausage or bacon (if using) to the egg mixture. Stir until all ingredients are evenly distributed.
  4. Pour the mixture into the prepared baking dish, spreading it out evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is lightly golden.
