Ingredients
For the Peach Filling
- 2 (29 oz) cans of sliced peaches, drained
- 1 cup granulated sugar
- ⅓ cup all-purpose flour
- ¼ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon kosher salt
For the Cobbler Topping
- 1 ¼ cups all-purpose flour
- ¾ cup granulated sugar
- ½ teaspoon kosher salt
- ½ teaspoon baking powder
- ¼ cup buttermilk (or substitute ¼ cup milk + ½ tbsp vinegar or lemon juice)
- 1 egg yolk
- ¼ cup cold butter, cut into small pieces
- 1 tablespoon granulated sugar (for sprinkling on top)
Instructions
1. Preheat the Oven
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish or a similar oven-safe pan.
2. Prepare the Peach Filling
- In a large mixing bowl, combine the drained peaches, granulated sugar, all-purpose flour, cinnamon, nutmeg, and salt.
- Mix gently to coat the peaches evenly with the dry ingredients.
- Spread the peach mixture evenly into the greased baking dish.
3. Make the Cobbler Topping
- In a medium bowl, whisk together the flour, granulated sugar, salt, and baking powder.
- Add the buttermilk and egg yolk, stirring gently until combined.
- Use a pastry cutter or your fingers to cut the cold butter into the flour mixture until it resembles coarse crumbs.
4. Assemble the Cobbler
- Crumble the cobbler topping over the peach filling, leaving a few areas exposed for a classic cobbler look.
- Sprinkle 1 tablespoon of granulated sugar over the topping for added crunch and sweetness.
5. Bake the Cobbler
- Place the baking dish in the preheated oven.
- Bake for 40–45 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
6. Cool and Serve
- Allow the cobbler to cool for 10–15 minutes.
- Serve warm with a scoop of vanilla ice cream, whipped cream, or enjoy it plain.
Notes
- Buttermilk Substitute: If you don’t have buttermilk, make a quick version by combining ¼ cup of milk with ½ tablespoon of vinegar or lemon juice. Let it sit for 5 minutes before using.
- Texture: For a crunchier topping, sprinkle coarse sugar instead of granulated sugar before baking.
- Peach Options: You can substitute canned peaches with fresh or frozen peaches. Adjust sugar based on their sweetness.
- Make Ahead: You can prepare the filling and topping separately in advance and assemble just before baking.
