Description
A refreshing and delightful treat made with sweet rice flour and watermelon puree, perfect for summer.
Ingredients
- 2 cups sweet rice flour (mochi flour)
- 1 cup water
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup watermelon puree (about 1 small watermelon)
- 1 tablespoon cornstarch (for dusting)
- 1/4 cup diced watermelon (for filling)
Instructions
- In a large mixing bowl, combine the sweet rice flour, granulated sugar, and salt. Mix well.
- Gradually add the water to the dry ingredients, stirring until smooth and well combined.
- Pour the mixture into a microwave-safe bowl or dish. Cover it with plastic wrap, leaving a small vent for steam to escape.
- Microwave on high for 1 minute. Carefully remove and stir. Microwave for another minute, stir again, and then microwave for an additional 30 seconds. The mixture should be sticky and slightly translucent.
- Dust a clean surface with cornstarch. Transfer the mochi mixture onto the dusted surface. Allow it to cool for a few minutes until it’s manageable.
- Once cool, knead the mochi gently for a minute, then flatten it into a rectangle about 1/4 inch thick.
- Use a round cookie cutter or a glass to cut out circles from the flattened mochi.
- Place a small spoonful of diced watermelon in the center of each mochi circle. Fold the edges over the filling and pinch to seal.
- Dust the finished mochi with additional cornstarch to prevent sticking.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a fun twist, try adding a few drops of food coloring to the mochi mixture to create a colorful treat.
- You can substitute the watermelon puree with other fruit purees like strawberry or mango for different flavors.
