Description

Ingredients

  • 2 cups sweet rice flour (mochi flour)
  • 1 cup water
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup watermelon puree (about 1 small watermelon)
  • 1 tablespoon cornstarch (for dusting)
  • 1/4 cup diced watermelon (for filling)

Instructions

  1. In a large mixing bowl, combine the sweet rice flour, granulated sugar, and salt. Mix well.
  2. Gradually add the water to the dry ingredients, stirring until smooth and well combined.
  3. Pour the mixture into a microwave-safe bowl or dish. Cover it with plastic wrap, leaving a small vent for steam to escape.
  4. Microwave on high for 1 minute. Carefully remove and stir. Microwave for another minute, stir again, and then microwave for an additional 30 seconds. The mixture should be sticky and slightly translucent.
  5. Dust a clean surface with cornstarch. Transfer the mochi mixture onto the dusted surface. Allow it to cool for a few minutes until it’s manageable.
  6. Once cool, knead the mochi gently for a minute, then flatten it into a rectangle about 1/4 inch thick.
  7. Use a round cookie cutter or a glass to cut out circles from the flattened mochi.
  8. Place a small spoonful of diced watermelon in the center of each mochi circle. Fold the edges over the filling and pinch to seal.
  9. Dust the finished mochi with additional cornstarch to prevent sticking.
  10. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a fun twist, try adding a few drops of food coloring to the mochi mixture to create a colorful treat.
