A delicious and easy-to-make White Chocolate Strawberry Cheesecake that combines creamy cheesecake with fresh strawberries and a graham cracker crust.
Ingredients
- 8 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 8 ounces white chocolate, melted and slightly cooled
- 1 cup sour cream
- 1 cup fresh strawberries, hulled and sliced
- 1 pre-made graham cracker crust (9-inch)
Instructions
- Preheat the oven to 325°F.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the granulated sugar and continue to beat until well combined.
- Mix in the vanilla extract.
- Add the eggs one at a time, mixing well after each addition.
- Pour in the melted white chocolate and mix until fully incorporated.
- Fold in the sour cream until the mixture is smooth.
- Pour the cheesecake batter into the graham cracker crust, smoothing the top with a spatula.
- Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Once cooled, refrigerate for at least 4 hours or overnight for best results.
- Before serving, top the cheesecake with sliced strawberries.
