Description

A delicious and easy-to-make White Chocolate Strawberry Cheesecake that combines creamy cheesecake with fresh strawberries and a graham cracker crust.

Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 8 ounces white chocolate, melted and slightly cooled
  • 1 cup sour cream
  • 1 cup fresh strawberries, hulled and sliced
  • 1 pre-made graham cracker crust (9-inch)

Instructions

  1. Preheat the oven to 325°F.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  3. Gradually add the granulated sugar and continue to beat until well combined.
  4. Mix in the vanilla extract.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Pour in the melted white chocolate and mix until fully incorporated.
  7. Fold in the sour cream until the mixture is smooth.
  8. Pour the cheesecake batter into the graham cracker crust, smoothing the top with a spatula.
  9. Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly.
  10. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
  11. Remove the cheesecake from the oven and let it cool to room temperature.
  12. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  13. Before serving, top the cheesecake with sliced strawberries.

Notes

  • For a richer flavor, consider adding a tablespoon of lemon juice to the batter.
  • To customize, try mixing in some crushed graham crackers or nuts into the crust for added texture.
