Instructions

1. Cook the Rice

  • In a saucepan, bring 200 ml of water to a boil.
  • Add a pinch of salt and 100 g rice. Reduce heat to low, cover, and simmer for 15-20 minutes until the water is absorbed and the rice is cooked.
  • Let the rice cool slightly before using it in the patties.

2. Prepare the Zucchini

  • Grate the zucchinis using a box grater.
  • Wrap the grated zucchini in a clean kitchen towel or cheesecloth and press firmly to remove excess moisture. This step ensures crispy patties.

3. Mix the Ingredients

  • In a large mixing bowl, combine the cooked rice, grated zucchini, and minced garlic.
  • Add salt, pepper, and your favorite spices to taste.
  • Beat the eggs and mix them into the bowl along with 1 tablespoon of flour. Stir everything until well combined.

4. Form the Patties

  • Take a small amount of the mixture and form it into a patty about the size of your palm.
  • Repeat with the remaining mixture until you’ve made all the patties.

5. Fry the Patties

  • Heat a generous amount of olive oil in a large skillet over medium heat.
  • Place the patties in the skillet carefully and fry for 3-4 minutes on each side, or until golden brown and crispy.
  • Transfer the cooked patties to a plate lined with paper towels to drain excess oil.
