Ingredients
- 2 zucchinis
- 100 g rice
- 200 ml water
- 2 eggs
- 1 tablespoon flour
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil for frying
Instructions
1. Cook the Rice
- In a saucepan, bring 200 ml of water to a boil.
- Add a pinch of salt and 100 g rice. Reduce heat to low, cover, and simmer for 15-20 minutes until the water is absorbed and the rice is cooked.
- Let the rice cool slightly before using it in the patties.
2. Prepare the Zucchini
- Grate the zucchinis using a box grater.
- Wrap the grated zucchini in a clean kitchen towel or cheesecloth and press firmly to remove excess moisture. This step ensures crispy patties.
3. Mix the Ingredients
- In a large mixing bowl, combine the cooked rice, grated zucchini, and minced garlic.
- Add salt, pepper, and your favorite spices to taste.
- Beat the eggs and mix them into the bowl along with 1 tablespoon of flour. Stir everything until well combined.
4. Form the Patties
- Take a small amount of the mixture and form it into a patty about the size of your palm.
- Repeat with the remaining mixture until you’ve made all the patties.
5. Fry the Patties
- Heat a generous amount of olive oil in a large skillet over medium heat.
- Place the patties in the skillet carefully and fry for 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the cooked patties to a plate lined with paper towels to drain excess oil.
6. Serve and Enjoy
- Serve the patties hot, garnished with parsley or dill if desired.
- Pair them with a creamy yogurt dip, marinara sauce, or a zesty garlic aioli.
Notes
- Make It Your Own: Customize the spices with paprika, chili flakes, or Italian seasoning to suit your taste.
- Zucchini Prep Tip: Removing moisture from the zucchini is crucial for crispy patties, so don’t skip this step!
- Cooking Alternatives: Bake the patties in the oven at 200°C (400°F) for 20-25 minutes, flipping halfway through, for a healthier option.
