Ingredients

For the Bars:

  • 2 cups shredded zucchini
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ¾ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Frosting:

  • 4 oz cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 ½ cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the Oven:
    • Preheat the oven to 350°F (175°C).
    • Grease a 9×13-inch baking dish with butter or nonstick spray.
  • Mix the Dry Ingredients:
    • In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  • Combine Wet Ingredients:
    • In a large bowl, mix granulated sugar, brown sugar, and vegetable oil until smooth.
    • Add eggs one at a time, followed by vanilla extract, and mix well.
  • Combine Wet and Dry Ingredients:
    • Gradually add the dry mixture to the wet mixture, stirring until just combined.
    • Gently fold in the shredded zucchini.
  • Bake the Bars:
    • Pour the batter into the prepared baking dish and spread evenly.
    • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
    • Cool completely in the pan before frosting.
  • Make the Cream Cheese Frosting:
    • Beat cream cheese and butter together until light and fluffy.
    • Gradually add powdered sugar, then stir in vanilla extract.
  • Frost the Bars:
    • Spread the frosting evenly over the cooled bars.
    • Optionally, sprinkle cinnamon or chopped nuts for garnish.
  • Serve:
    • Slice into squares and enjoy!
