Ingredients
For the Bars:
- 2 cups shredded zucchini
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon salt
- 1 cup granulated sugar
- ½ cup brown sugar
- ¾ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
For the Frosting:
- 4 oz cream cheese, softened
- 2 tablespoons butter, softened
- 1 ½ cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the Oven:
- Preheat the oven to 350°F (175°C).
- Grease a 9×13-inch baking dish with butter or nonstick spray.
- Mix the Dry Ingredients:
- In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Combine Wet Ingredients:
- In a large bowl, mix granulated sugar, brown sugar, and vegetable oil until smooth.
- Add eggs one at a time, followed by vanilla extract, and mix well.
- Combine Wet and Dry Ingredients:
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Gently fold in the shredded zucchini.
- Bake the Bars:
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely in the pan before frosting.
- Make the Cream Cheese Frosting:
- Beat cream cheese and butter together until light and fluffy.
- Gradually add powdered sugar, then stir in vanilla extract.
- Frost the Bars:
- Spread the frosting evenly over the cooled bars.
- Optionally, sprinkle cinnamon or chopped nuts for garnish.
- Serve:
- Slice into squares and enjoy!
