Ingredients

For the Zucchini Toast:

For the Yogurt Sauce:

  • 1 cucumber, grated
  • 1 green onion, chopped
  • A bunch of dill, chopped
  • 1 cup yogurt
  • 2 tablespoons Parmesan cheese, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Zucchini Mixture:

  • Heat olive oil in a large skillet over medium heat.
  • Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Stir in the grated carrot and sliced zucchini. Cook, stirring occasionally, until the vegetables are tender and slightly golden (about 7-10 minutes).

2. Add Fresh Herbs:

  • Add the chopped green onions and parsley to the skillet.
  • Cook for an additional 2-3 minutes to let the flavors meld.

3. Toast the Bread:

  • While the zucchini mixture cooks, toast slices of bread until golden and crispy.

4. Make the Yogurt Sauce:

  • In a mixing bowl, combine grated cucumber, chopped green onion, and dill.
  • Stir in the yogurt, Parmesan cheese, olive oil, salt, and pepper. Mix until smooth and creamy.

5. Assemble the Dish:

  • Arrange the toasted bread slices on a serving platter.
  • Spoon the zucchini mixture onto the toast, spreading it evenly.
  • Sprinkle shredded mozzarella cheese on top, letting it melt slightly over the warm vegetables.

6. Garnish and Serve:
