Start your day with these savory Baked Cheese and Bacon Egg Cups! A delicious combination of crispy bacon, gooey cheese, and perfectly cooked eggs nestled in golden bread cups, these breakfast delights are perfect for brunch, grab-and-go snacks, or a cozy morning treat.

Ingredients

  • 6 slices of bread
  • 6 slices of cheese
  • 6 slices of bacon
  • 4 eggs
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Green onion, chopped (for garnish)
  • 100 grams hunter sausages, sliced
  • 100 grams cheese, grated

Instructions

  • Prepare the Oven and Pan:

    • Preheat your oven to 375°F (190°C).
    • Lightly grease a muffin tin with butter or cooking spray.
  • Prepare the Ingredients:

    • Cut the crusts off the bread slices and flatten each slice with a rolling pin. Press each slice firmly into the muffin cups to create the base.
    • Cook the bacon in a skillet over medium heat until partially cooked but still pliable. Drain on paper towels.
    • Slice the hunter sausages into thin rounds.
  • Assemble the Egg Cups:

    • Place a slice of cheese over the bread base in each muffin cup.
    • Line the edges of the muffin cups with a slice of bacon, forming a ring.
    • Add a few slices of hunter sausages on top of the cheese.
  • Add the Eggs:

    • Crack an egg into each muffin cup. If using smaller muffin tins, beat the eggs first and pour evenly into each cup.
    • Season with salt and black pepper to taste.
  • Top with Grated Cheese:

    • Sprinkle grated cheese over each egg cup for a cheesy finish.
  • Bake:

    • Place the muffin tin in the oven and bake for 15-20 minutes, or until the eggs are set and the bacon is crispy.
    • For runny yolks, check the egg cups at the 12-minute mark.
  • Garnish and Serve:

    • Once baked, let the egg cups cool slightly before removing them from the tin.
    • Garnish with freshly chopped parsley and green onions.

Notes

  • Adjustable Baking Time: Monitor the eggs closely to achieve your preferred yolk consistency.
  • Alternative Fillings: Swap out bacon and sausages for spinach, mushrooms, or diced bell peppers for a vegetarian twist.
  • Make Ahead: Prepare the egg cups in advance, store them covered in the fridge, and bake fresh when needed.
  • Storage Tips: Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
