Description

This Easy Homemade Corn Casserole is a creamy, savory, and slightly sweet side dish perfect for any occasion. Whether it’s a holiday table, a family gathering, or a casual weeknight dinner, this recipe is quick to prepare and guaranteed to impress. Made with simple, wholesome ingredients, it’s rich, satisfying, and a crowd favorite.

Ingredients

Dry Ingredients

  • ¼ cup natural cane sugar (optional; substitute with Monk fruit for a lower-sugar option)
  • 3 tablespoons all-purpose flour (or gluten-free flour for a GF version)
  • 2 teaspoons baking powder
  • 1 ½ teaspoons kosher salt

Corn Mixture

  • 8 cups whole kernel corn (frozen, fresh, or drained canned corn)
  • 6 large eggs
  • 2 cups heavy whipping cream (not fat-free)
  • ½ cup butter, melted (use salted or unsalted; add ¼ tsp salt if unsalted)

Instructions

1. Preheat the Oven and Prepare the Dish

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a 9×13-inch baking dish (or any deep casserole dish) and set aside.

2. Mix the Dry Ingredients

  • In a medium-sized bowl, whisk together the sugar, flour, baking powder, and kosher salt. Set aside.

3. Combine the Wet Ingredients

  • In a large mixing bowl, whisk together the eggs and heavy whipping cream until smooth.
  • Gradually add the melted butter while stirring to combine.

4. Assemble the Casserole

  • Fold the whole kernel corn into the wet mixture until evenly distributed.
  • Slowly sprinkle the dry ingredients into the corn mixture, stirring gently until everything is well combined. Avoid overmixing.

5. Bake the Casserole

  • Pour the mixture into the greased baking dish, spreading it evenly with a spatula.
  • Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and the center is set. Test with a toothpick—it should come out clean.

6. Rest and Serve

  • Allow the casserole to cool for 5-10 minutes before slicing and serving. This helps it set and makes it easier to serve neat portions.

Notes

  • Corn Options: Fresh, frozen (thawed), or drained canned corn all work well.
  • Make Ahead: Prepare the mixture a day in advance and refrigerate. Bake fresh before serving.
  • Variations: Add shredded cheese, jalapeños, or crumbled bacon for extra flavor.
  • Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven at 350°F or microwave individual portions.
