Ingredients

  • 2 lbs skirt steak
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • 6 teaspoons minced garlic
  • 6 tablespoons unsalted butter
  • ½ cup fresh parsley, finely chopped

Instructions

1. Prepare the Steak

  • Season both sides of the skirt steak generously with salt and freshly ground black pepper.
  • Let the steak rest at room temperature for 20–30 minutes to allow the seasoning to penetrate.

2. Heat the Pan or Grill

  • Preheat a heavy skillet, grill pan, or outdoor grill over high heat.
  • If using a skillet, drizzle a small amount of oil to prevent sticking.

3. Cook the Steak

  • Place the steak on the hot surface and sear for 3–5 minutes per side for medium-rare. Adjust cooking time for your preferred doneness.
  • Use a meat thermometer to check the internal temperature:
    • Rare: 120–125°F
    • Medium-Rare: 130–135°F
    • Medium: 140–145°F
  • Once cooked, transfer the steak to a cutting board and let it rest for 5 minutes.

4. Make the Garlic Butter Sauce

  • In a small saucepan or skillet, melt the butter over medium heat.
  • Add the minced garlic and sauté for 1–2 minutes until fragrant. Be careful not to burn the garlic.
  • Stir in the chopped parsley and cook for another 30 seconds. Remove from heat.

5. Slice and Serve

  • Using a sharp knife, slice the steak against the grain into thin strips.
  • Drizzle the garlic butter sauce generously over the steak.
  • Garnish with additional parsley if desired, and serve immediately.

Notes

  • Cooking Temperature: Always use a meat thermometer for precision, as steak thickness and grill heat may vary.
  • Butter Sauce Variations: For a twist, add a splash of lemon juice or red pepper flakes to the butter sauce.
  • Cutting the Steak: Always slice against the grain to ensure tenderness.
