Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 pound fresh green beans, trimmed
  • 4 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, oregano, paprika, salt, and pepper.
  3. Place the chicken breasts in a large bowl or a resealable plastic bag and pour the garlic mixture over them. Make sure the chicken is well-coated. Let it marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. In a large oven-safe skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Once hot, add the marinated chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set aside. In the same skillet, add the green beans and sauté for 2-3 minutes until they start to soften.
  6. Return the chicken to the skillet, nestling it among the green beans. Squeeze the lemon juice over the top.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the green beans are tender.
  8. Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley if desired before serving.
