This Lemongrass Chicken Stir-Fry is a fragrant and colorful Southeast Asian-inspired dish that comes together in just 30 minutes. Tender chicken, crisp vegetables, and a citrusy lemongrass-garlic-ginger base make this a weeknight dinner hero. Serve it over jasmine rice and garnish with fresh cilantro for a meal that’s as vibrant as it is delicious.
Ingredients
- 2 tablespoons vegetable oil
- 2 stalks lemongrass (white part only, finely chopped)
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 pound boneless, skinless chicken thighs, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 cup snap peas
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1/4 teaspoon black pepper
- Cooked jasmine rice, for serving
- Fresh cilantro, for garnish
Instructions

Prep the Chicken & Vegetables
Slice chicken thighs into thin strips. Slice the red bell pepper and rinse the snap peas, trimming the ends if needed. -
Heat the Oil & Sauté Aromatics
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add chopped lemongrass, garlic, and ginger. Sauté for 1 minute, until fragrant. -
Cook the Chicken
Add the sliced chicken to the skillet. Stir-fry for 5–7 minutes, or until cooked through and lightly browned. -
Add the Vegetables
Add red bell pepper and snap peas. Stir-fry for 3–4 minutes, until tender-crisp. -
Make the Sauce & Finish
In a small bowl, mix soy sauce, fish sauce, brown sugar, sesame oil, and black pepper. Pour over the chicken and veggies, stirring well to coat. Cook for 1–2 more minutes to heat through.

Spoon over jasmine rice and garnish with fresh cilantro.
Notes
- No lemongrass? Substitute 1 tablespoon of lemongrass paste or 1 teaspoon of lemon zest + 1 teaspoon of lime juice.
- Use low-sodium soy sauce to reduce salt content.
- For extra texture, top with chopped peanuts or sesame seeds.
