Description

Mongolian Chicken is a delicious dish made with tender chicken thighs, sautéed with garlic, ginger, and green onions, then coated in a sweet and savory sauce.

Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 1/2 cup green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. Heat the vegetable oil and sesame oil in a large skillet over medium-high heat.
  2. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the green onions, garlic, and ginger. Sauté for 1-2 minutes until fragrant.
  4. In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, water, and red pepper flakes if using. Pour this mixture into the skillet and bring to a simmer.
  5. Return the chicken to the skillet and stir to coat in the sauce. Cook for an additional 2-3 minutes until the sauce thickens.
  6. Serve over cooked rice.

Notes

  • For a sweeter flavor, add an extra tablespoon of brown sugar.
  • You can substitute chicken thighs with chicken breast for a leaner option.
  • For added crunch, toss in some chopped bell peppers or snap peas during the sautéing step.
