Description
Mongolian Chicken is a delicious dish made with tender chicken thighs, sautéed with garlic, ginger, and green onions, then coated in a sweet and savory sauce.
Ingredients
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
- 1/2 cup green onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 1/4 cup water
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- Heat the vegetable oil and sesame oil in a large skillet over medium-high heat.
- Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the green onions, garlic, and ginger. Sauté for 1-2 minutes until fragrant.
- In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, water, and red pepper flakes if using. Pour this mixture into the skillet and bring to a simmer.
- Return the chicken to the skillet and stir to coat in the sauce. Cook for an additional 2-3 minutes until the sauce thickens.
- Serve over cooked rice.
Notes
- For a sweeter flavor, add an extra tablespoon of brown sugar.
- You can substitute chicken thighs with chicken breast for a leaner option.
- For added crunch, toss in some chopped bell peppers or snap peas during the sautéing step.
