- Lay a tortilla flat on a clean surface. Spread BBQ sauce and light mayo in a line down the center.
- Sprinkle shredded cheddar over the BBQ sauce, then add chopped BBQ chicken, red onion, and spinach.
- Tuck in the sides of the tortilla and roll tightly from the bottom to the top.
- Preheat a skillet over medium-high heat for about 2 minutes.
- Place the wrap seam-side down into the skillet and cook for 1-2 minutes until golden brown. Flip and cook for another 1-2 minutes.
