Method
 

Step by Step Instructions
  1. Peel and dice 2-3 firm apples. In a medium saucepan, combine the diced apples with ⅓ cup of sugar, 1 teaspoon of cinnamon, and a pinch of nutmeg. Cook for about 10-12 minutes until apples are soft.
  2. Remove from heat and let cool. In a mixing bowl, combine cooked apples with 1 cup of graham cracker crumbs, 1 teaspoon of vanilla extract, and 2 tablespoons of melted butter. Mix until well incorporated.
  3. Refrigerate the filling mixture for about 30 minutes to firm it up.
  4. Scoop portions of the mixture and roll into bite-sized balls.
  5. Melt 8 ounces of white chocolate until smooth. Dip each truffle into the chocolate, allowing excess to drip off.
  6. Place coated truffles on a parchment-lined tray and allow to cool until the chocolate hardens, about 15-30 minutes.
