- Make the Coconut Basil Sauce by blending coconut milk, basil, cashew butter, lime juice, garlic, ginger, jalapeño, and salt until smooth.
- Soak the spring roll rice wrappers in warm water for about 7 seconds until soft.
- Assemble the rolls with rice noodles, tofu, avocado, peach/mango, radish, and herbs on a softened wrapper, folding edges and rolling tightly.
- Serve rolls on a platter with coconut basil sauce and optional tamari or sriracha.
