  • 1 thumb-sized piece Ginger fresh ginger brings a lively aroma
  • 1 small Jalapeño adjust according to your spice tolerance
  • Salt to balance the flavors; sea salt enhances overall taste
Summer Rolls
  • 6 pieces Spring Roll Rice Wrappers (28cm) look for a brand that suits your preference
  • 1 cup Cooked Rice Noodles can swap with glass noodles for variety
  • 1 block Extra-Firm Tofu bake for a firmer bite or enjoy fresh
  • 1 ripe Avocado essential for those rich, luscious bites
  • 1 piece Peach or Ripe Mango feel free to replace with seasonal fruits
  • 1 piece Watermelon Radish (optional) regular radish can be used instead
  • 1 handful Fresh Herbs (Basil, Thai Basil, Mint) mix and match as you like
  • 1 tablespoon Sesame Seeds sprinkle on top for a pop of flavor
  • Tamari/Sriracha (optional) serve on the side for added heat

Preparation Steps
  1. Make the Coconut Basil Sauce by blending coconut milk, basil, cashew butter, lime juice, garlic, ginger, jalapeño, and salt until smooth.
  2. Soak the spring roll rice wrappers in warm water for about 7 seconds until soft.
  3. Assemble the rolls with rice noodles, tofu, avocado, peach/mango, radish, and herbs on a softened wrapper, folding edges and rolling tightly.
  4. Serve rolls on a platter with coconut basil sauce and optional tamari or sriracha.
