Method
 

Step-by-Step Instructions
  1. Prepare the cookie base by crushing chocolate-covered butter cookies into fine crumbs and mixing with Irish Cream.
  2. Combine the cookie crumbs with mascarpone cheese until smooth and creamy.
  3. Shape the mixture into 1-inch balls and freeze for at least 45 minutes.
  4. Melt white chocolate over a double boiler and keep warm.
  5. Dip each cheesecake ball in melted white chocolate, then refrigerate for 1 hour to set.
  6. Melt dark chocolate to drizzle on top of the set cheesecake balls.
  7. Drizzle melted dark chocolate over the cheesecake balls and let sit for 30 minutes to set.
