For the Tacos
  • 8 pieces Corn Tortillas gluten-free base
  • 2 cups Cabbage shredded, can use coleslaw mix
For the Slaw
  • 1/2 cup Cilantro chopped, optional
  • 2 tablespoons Lime Juice freshly squeezed
For the Avocado Crema
  • 1 large Avocado ripe
For Topping
  • 1 cup Pico de Gallo store-bought or homemade

Method
 

Preparation Steps
  1. Start by sprinkling the blackening spice generously over the cod fillets, ensuring an even coating.
  2. Heat a non-stick skillet over medium-high heat and add a splash of oil.
  3. Once hot, place the seasoned fish in the pan, cooking for about 3-4 minutes on each side until golden brown and flaky.
  4. In a medium bowl, combine the shredded cabbage with lime juice and cilantro. Toss to coat and soften for about 2-3 minutes.
  5. In a blender, combine avocado and lime juice, blending until smooth. If thick, add a tablespoon of water.
  6. Warm the corn tortillas in a skillet for about 30 seconds on each side until pliable.
  7. Assemble tacos by placing fish in tortillas, topping with cilantro lime slaw and avocado sauce.
  8. Plate tacos, add pico de gallo on top, and serve with lime wedges.
