- Preheat your oven to 375°F (190°C).
- In your skillet, melt a tablespoon of unsalted butter over medium heat. Add minced garlic and sauté for about 1 minute until light golden.
- Gradually add your fresh spinach to the skillet, stirring until wilted (about 2-3 minutes). Season with salt and pepper.
- Slowly incorporate heavy cream, lemon zest, and lemon juice into the spinach. Allow the sauce to thicken while mixing for about 2 minutes.
- Create several wells in the mixture and crack eggs gently into each well. Season with salt and pepper, and sprinkle additional Parmesan on top.
- Transfer the skillet to the oven and bake for 12-15 minutes until the whites are set but yolks are slightly runny.
- Remove from oven and let sit for a few minutes before serving.
