For the Feta Topping
  • 200 g block Feta Cheese Substitute with plant-based feta for vegan option.
  • 1 head Garlic Roasted for sweetness.
  • 1 piece Lemon Quartered; half to be squeezed over feta.
For the Finishing Touch
  • 1 tbsp Honey Balances flavors; use maple syrup for vegan.
  • 20 g Fresh Basil Add before serving for freshness.

Method
 

Preparation Steps
  1. Preheat the oven to 200°C (390°F).
  2. Wash and cube the large baking potatoes into bite-sized pieces. Par-boil in salted water for 6-8 minutes until tender, then drain.
  3. Toss the par-boiled potatoes with olive oil, dried thyme, dried oregano, salt, black pepper, and red chili flakes in a baking dish.
  4. Roast the potatoes in the preheated oven for 30-40 minutes, stirring halfway through, until golden brown and crispy.
  5. Create a space in the center of the potatoes and place the feta cheese block and crushed garlic. Squeeze half the lemon over the feta and roast for an additional 15 minutes.
  6. Mix the roasted garlic with the remaining lemon juice, then drizzle honey over the potatoes and feta before serving.
  7. Toss in the garlic-lemon mixture and sprinkle with fresh basil before serving.
