Preparation Steps
- Preheat the oven to 200°C (390°F).
- Wash and cube the large baking potatoes into bite-sized pieces. Par-boil in salted water for 6-8 minutes until tender, then drain.
- Toss the par-boiled potatoes with olive oil, dried thyme, dried oregano, salt, black pepper, and red chili flakes in a baking dish.
- Roast the potatoes in the preheated oven for 30-40 minutes, stirring halfway through, until golden brown and crispy.
- Create a space in the center of the potatoes and place the feta cheese block and crushed garlic. Squeeze half the lemon over the feta and roast for an additional 15 minutes.
- Mix the roasted garlic with the remaining lemon juice, then drizzle honey over the potatoes and feta before serving.
- Toss in the garlic-lemon mixture and sprinkle with fresh basil before serving.
