Cooking Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine halved baby potatoes with olive oil, garlic powder, dried oregano, salt, and black pepper. Toss to coat.
- Transfer the seasoned potatoes onto the prepared baking sheet, spreading them out in a single layer.
- Place the block of feta cheese in the center of the potatoes, adding cherry tomatoes around it if using.
- Bake for 30–35 minutes until potatoes are golden and tender, and feta is softened.
- Drizzle lemon juice over the potatoes and feta, then garnish with fresh basil or parsley before serving.
