Ingredients

  • 4 pieces Ripe Pears Bosc or Anjou pears recommended.
  • 4 ounces Goat Cheese Can substitute with cream cheese or ricotta.
  • 1/2 cup Fresh or Dried Cranberries Use dried cranberries if fresh are unavailable.
  • 1/4 cup Honey Agave syrup can be used for lower sugar.
  • 1 tablespoon Fresh Lemon Juice Use juice of about half a lemon.
  • 1 teaspoon Ground Cinnamon Optional nutmeg (1/4 teaspoon) can be added.
For the Crunch
  • 1/4 cup Chopped Walnuts or Pecans Omit for nut-free or use sunflower seeds.
For Garnish
  • Fresh Mint Leaves Optional garnish.

Method
 

Baking Steps
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a baking dish with cooking spray or olive oil.
  3. In a mixing bowl, combine goat cheese, honey, lemon juice, cinnamon, and optional nutmeg until smooth.
  4. Slice the ripe pears in half lengthwise and remove the core. Place cut-side up in the baking dish.
  5. Generously spoon the goat cheese mixture into each pear half.
  6. Sprinkle cranberries evenly on top of each filled pear half.
  7. If desired, sprinkle chopped walnuts or pecans over the filled pears.
  8. Drizzle a bit more honey over the tops of the pears.
  9. Cover the dish with aluminum foil and bake for 25-30 minutes until pears are tender.
  10. Remove the foil during the last 5-10 minutes to allow the tops to brown.
  11. Let the pears cool for a couple of minutes before serving.
  12. Garnish with fresh mint leaves before serving.
