Baking Steps
- Preheat your oven to 350°F (175°C).
- Lightly grease a baking dish with cooking spray or olive oil.
- In a mixing bowl, combine goat cheese, honey, lemon juice, cinnamon, and optional nutmeg until smooth.
- Slice the ripe pears in half lengthwise and remove the core. Place cut-side up in the baking dish.
- Generously spoon the goat cheese mixture into each pear half.
- Sprinkle cranberries evenly on top of each filled pear half.
- If desired, sprinkle chopped walnuts or pecans over the filled pears.
- Drizzle a bit more honey over the tops of the pears.
- Cover the dish with aluminum foil and bake for 25-30 minutes until pears are tender.
- Remove the foil during the last 5-10 minutes to allow the tops to brown.
- Let the pears cool for a couple of minutes before serving.
- Garnish with fresh mint leaves before serving.
