- Preheat the oven to 400°F (200°C). Prepare your large oven-safe skillet.
- Sauté the ground beef and diced onion in olive oil for 5-7 minutes until browned.
- Season with salt, taco seasoning, smoked paprika, and granulated garlic. Cook for 1-2 minutes.
- Incorporate red enchilada sauce, beef broth, mild green chiles, and uncooked white rice. Stir and bring to boil.
- Cover and reduce heat, simmer for 15-20 minutes until rice absorbs liquid.
- Fold in sour cream and half of the shredded cheese.
- Layer Fritos and remaining cheese on top. Bake for 8-10 minutes until cheese is melted.
- Garnish with lettuce, cilantro, diced tomatoes, and jalapeños before serving.
