Method
 

Step‑by‑Step Instructions
  1. In a small bowl, combine sweet paprika, onion powder, garlic powder, thyme, oregano, cayenne pepper, black pepper, and sea salt. Mix well.
  2. In another bowl, blend together lime zest, lime juice, grated garlic, chopped cilantro, Greek yogurt, and a pinch of salt until smooth.
  3. Soak diced red onion in cold water for 10 minutes. Dice fresh pineapple and jalapeno, then mix with soaked onion, lime juice, and sea salt.
  4. Heat vegetable oil in a large skillet over medium-high heat. Season tilapia fillets with blackening seasoning, then cook for 3-5 minutes on each side until browned.
  5. Remove cooked tilapia and let it rest. Warm tortillas, fill with tilapia, and top with pineapple salsa and cilantro lime sauce.
