Ingredients

For the Salad
  • 2 cups fresh blueberries Adds natural sweetness and antioxidants; best when fresh to maintain texture.
  • 2 medium ripe peaches Provides juicy bites and aromatic sweetness; can substitute with nectarines for a similar flavor.
  • 1 cup crumbled feta cheese Adds creamy, tangy depth; substitutes include goat cheese or ricotta salata.
  • 4 cups mixed greens Supplies a fresh, peppery base; arugula can enhance the flavor profile.
  • 1/4 cup chopped red onion Introduces sharpness and crunch; can be omitted for a milder taste.
  • 1/2 cup chopped walnuts Offers crunchy texture and nutty flavor; pecans or almonds work well as replacements.
For the Dressing
  • 2 tablespoons honey Sweetens the dressing and balances acidity; agave syrup can be an alternative for a vegan option.
  • 2 tablespoons balsamic vinegar Provides acidity and depth; substitute with apple cider vinegar if desired.
  • 3 tablespoons olive oil Helps emulsify the dressing and adds richness; avocado oil is a great substitute for a different flavor.
  • to taste black pepper Enhances overall flavor; use freshly cracked pepper for the best taste.
  • to taste salt Enhances overall flavor.

Equipment

  • fine mesh strainer
  • Mixing bowl
  • salad spinner
  • small bowl
  • tongs

Method

Step-by-Step Instructions
  1. Rinse the fresh blueberries under cold running water in a fine mesh strainer. Gently shake the strainer to remove excess moisture, then pat the blueberries dry with a clean kitchen towel.
  2. Slice the ripe peaches into wedges and place them into a large mixing bowl with the blueberries.
  3. Sprinkle the crumbled feta cheese over the bowl of mixed fruit.
  4. Wash the mixed greens thoroughly under cool water, then dry them using a salad spinner or by patting them gently with a towel. Add the dried greens to your fruit-and-feta mixture in the bowl.
  5. Chop a small red onion finely, then sprinkle it over the salad mixture.
  6. Roughly chop some walnuts and scatter them on top of the salad.
  7. In a separate small bowl, whisk together honey, balsamic vinegar, olive oil, a pinch of black pepper, and salt until well combined.
  8. Drizzle the prepared dressing over the salad mixture evenly. Using tongs, gently toss the salad to combine all the ingredients.
  9. Taste your salad and make any necessary adjustments.
  10. Serve the salad immediately for a fresh dish, or refrigerate it for up to an hour if you prefer a chilled experience.
