Ingredients

  • 5 whole Fresh Chili bird's eye, long red, or Thai chilis
  • 3 cloves Garlic
  • 2 medium Red Shallot or yellow onions
For the Flavor Boosters
  • 1 stalk Lemongrass roughly chopped
  • 1 inch Galangal optional; substitute with ginger
  • 1 teaspoon Dried Chili Flakes optional
  • 1 tablespoon Annatto Seeds optional for color
  • 1 stick Chinese Cinnamon Bark or regular cinnamon
  • 2 whole Star Anise omit if unavailable
For the Seasoning
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Sugar adjust to taste
  • 1 tablespoon Chicken Bouillon Powder or vegetable bouillon
  • 3 tablespoons Fish Sauce or soy sauce for vegetarian
  • 2 cups Cooking Oil neutral oil for cooking

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 180°C (356°F) and roast the fresh chilis for 10 minutes.
  2. Finely chop the garlic, red shallots, and optional galangal.
  3. Roughly chop the lemongrass and blend until finely minced.
  4. Infuse 2 cups of oil with annatto seeds over low heat for 3-5 minutes.
  5. Heat 1 cup of oil with star anise and Chinese cinnamon for 2 minutes.
  6. Sauté the chopped garlic, shallots, and galangal for 1 minute until golden.
  7. Combine minced lemongrass, roasted chilis, seasoning, and cook for 10 minutes.
  8. Stir in the reserved annatto oil and mix well for another minute.
  9. Cool to room temperature and transfer to airtight containers.
