Cooking Steps
- Prepare the bratwurst by choosing smoking, grilling, or air-frying as your method. Smoke at 225°F for 2 hours, grill for 6-8 minutes per side on medium-high heat, or air fry at 360°F for 12-15 minutes.
- While bratwurst cooks, make the smoked beer cheese sauce by melting 2 cups of cheese, 1 cup of beer, and 2 tablespoons of butter in a saucepan over medium heat until smooth.
- Cook the tater tots according to package instructions, typically at 450°F for 25-30 minutes in the oven or at 400°F for 15-20 minutes in an air fryer.
- Slice the cooked bratwurst into bite-sized pieces and set aside.
- Assemble the nachos by layering tater tots on a platter, drizzling with cheese sauce, and adding bratwurst, sweet peppers, onions, and optional hot giardiniera.
- Top with sour cream and chopped chives or green onions before serving.
- Serve immediately to enjoy crispy tater tots.
