For the Salad

For the Vinaigrette

  • 2 tablespoons Champagne Vinegar White wine vinegar is a substitute.
  • 1 clove Garlic Minced; roasted garlic gives a sweeter profile.
  • 1 teaspoon Dijon Mustard Helps emulsify dressing; whole grain can be used.
  • 1 each Shallot Diced; yellow onion as a substitute.
  • Salt Adjust to personal taste.
  • Black Pepper Adjust to personal taste.

Method
 

Preparation and Cooking
  1. In a small bowl or jar, combine extra virgin olive oil, champagne vinegar, minced garlic, Dijon mustard, and finely diced shallot. Season with salt and black pepper to taste. Whisk or shake until emulsified and smooth. Set aside.
  2. Place chicken breasts in a medium bowl. Pour half of the vinaigrette over the chicken, tossing to coat. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Preheat grill to 400°F (204°C). Grill chicken for 5-6 minutes on each side until the internal temperature reaches 165°F (74°C). Let rest.
  4. On a large platter, layer arugula and mixed greens. Slice grilled chicken and arrange on top. Add sliced strawberries and diced avocado. Sprinkle with feta cheese, then drizzle with remaining vinaigrette before serving.
