- Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
- Melt 1 cup of unsalted butter in a medium saucepan over low-medium heat for 5-6 minutes until browned.
- In a stand mixer, combine the brown butter, 1 cup brown sugar, and 1/2 cup granulated sugar and mix until fluffy. Add 1 egg and 1 teaspoon vanilla, mixing until smooth.
- Whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon kosher salt in a separate bowl, then gradually add to the wet mixture until just incorporated.
- Scoop 3-4 tablespoons of dough, form a ball, create a well, and fill with 1 teaspoon strawberry preserves. Seal and roll into a ball again.
- Place cookie balls on prepared sheets, leaving space. Bake for 12-14 minutes until edges are golden.
- Cool cookies on the baking sheet for 10 minutes before transferring them to a wire rack.
