Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Spray your baking dish with cooking spray.
  2. Heat 1 tablespoon of avocado oil over medium-high heat. Add chicken and season with salt and pepper. Cook for 6-8 minutes until golden brown.
  3. Transfer the cooked chicken to the baking dish, spreading it evenly.
  4. Top the chicken with chopped tomatoes, crushed garlic, and dried oregano. Drizzle balsamic vinegar over everything.
  5. Sprinkle shredded mozzarella cheese evenly on top.
  6. Bake for 18-20 minutes until the cheese is melted and bubbly.
  7. Let rest for 5 minutes. Garnish with fresh basil before serving.
