Buffalo Tofu
  • 1 cup Buffalo Sauce Substitute with mild buffalo sauce for less heat.
  • 1 block Super Firm Tofu Replace with shredded jackfruit if desired.
  • 1 teaspoon Garlic Powder Use fresh minced garlic for stronger flavor.
  • 1 teaspoon Smoked Paprika Regular paprika can be used if smoked is unavailable.
  • to taste Pepper Add according to your spice preference.
Slaw
  • 1 cup Vegan Mayo Substitute with tahini for a nutty twist.
  • 2 tablespoons Apple Cider Vinegar Lemon juice works as a suitable alternative.
  • 2 tablespoons Fresh Lemon Juice Use extra vinegar if you’re out of lemons.
  • 1 tablespoon Dijon Mustard Yellow mustard is a great alternative.
  • 1 tablespoon Maple Syrup Agave syrup can work as a substitute.
  • 1 stalk Celery (with leaves) No substitute needed unless allergic.
  • 2 cups Shredded Green Cabbage You can also use pre-made slaw mix.
  • 1 small Red Onion Green onion is a milder substitute.
  • 1 medium Carrot Consider shredded zucchini if you prefer alternatives.
Assembling the Sliders
  • 6 rolls Dinner Rolls Use gluten-free rolls if needed.
  • 1 cup Vegan Ranch Dressing Store-bought or homemade works well.
  • 1 cup Shredded Vegan Cheese Mozzarella or cheddar-style is great.
  • 2 tablespoons Vegan Butter Can be replaced with olive oil if preferred.
  • to taste Fresh Parsley Feel free to omit for a simpler dish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). In a medium mixing bowl, combine buffalo sauce, garlic powder, smoked paprika, and pepper, stirring vigorously until well mixed.
  2. Take your super firm tofu and shred it into bite-sized pieces. Toss the shredded tofu in the buffalo sauce mixture until every piece is evenly coated. Spread the sauced tofu on a baking tray and bake for 25-30 minutes.
  3. In a large bowl, whisk together vegan mayo, apple cider vinegar, fresh lemon juice, Dijon mustard, maple syrup, and season with salt and pepper until creamy. Fold in the shredded celery, green cabbage, red onion, and carrot.
  4. Once the tofu is nearly done baking, reduce the oven temperature to 375°F (190°C). Slice the dinner rolls in half horizontally, keeping the bottom halves attached.
  5. Spread a layer of vegan ranch dressing over the bottom buns, followed by half of your melted vegan cheese. Pile on the baked buffalo tofu, then top with the remaining vegan cheese.
  6. Cover the assembled sliders loosely with foil and bake for about 12-15 minutes. After this, remove the foil and brush the tops of the rolls with melted vegan butter.
  7. Once baked, allow the sliders to cool slightly before serving, and either spoon the slaw directly onto the sliders or serve it on the side.
