  • 2 cups shredded green cabbage Fresh, crisp cabbage is best.
  • 1 cup shredded red cabbage Can substitute with more green cabbage.
  • 1 cup cooked edamame Fresh or frozen, cooked and shelled.
  • 1 cup shredded carrots Grated or julienned.
  • ½ cup sliced green onions Shallots can be used for sweetness.
For Extra Flavor
  • ¼ cup chopped cilantro Can substitute with parsley.
  • ¼ cup toasted sliced almonds Use sunflower seeds for nut-free options.
For the Dressing
  • 3 tablespoons sesame oil Toasted enhances the flavor.
  • 2 tablespoons rice vinegar Apple cider vinegar is a good substitute.
  • 2 tablespoons soy sauce Tamari for gluten-free.
  • 1 tablespoon honey Agave syrup for vegan.
  • 1 tablespoon grated ginger Prepared ginger paste can be used.
  • 1 clove minced garlic Garlic powder can work in a pinch.
  • pinch red pepper flakes Optional for heat.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine 2 cups of shredded green cabbage, 1 cup of shredded red cabbage, 1 cup of cooked edamame, 1 cup of shredded carrots, and ½ cup of sliced green onions. Toss gently until evenly mixed.
  2. In a separate small bowl, whisk together 3 tablespoons of toasted sesame oil, 2 tablespoons of rice vinegar, 2 tablespoons of soy sauce, 1 tablespoon of honey, 1 tablespoon of grated ginger, 1 clove of minced garlic, and a pinch of red pepper flakes until smooth.
  3. Drizzle the dressing over the salad mixture and toss until well-coated.
  4. Let the salad sit for about 10 minutes at room temperature to allow flavors to meld.
  5. Serve chilled or at room temperature, garnished with additional toasted sliced almonds or sesame seeds, if desired.
