  • 4 cups finely shredded cabbage any variety such as savoy, napa, green, or purple
  • 2 tablespoons oil for cooking
  • 1 teaspoon mustard seeds can be skipped for a milder profile
  • 2 tablespoons split urad dal or chana dal for protein and texture
  • 1 piece broken red chile pepper or fresh green chiles for a kick
  • 1 cup shredded coconut both fresh and desiccated work
  • 0.5 tablespoons lemon juice can substitute with lime juice
  • 1 bunch cilantro or parsley, optional for garnish

Preparation Steps
  1. Heat 2 tablespoons of oil in a large skillet over medium heat until shimmering, about 1-2 minutes.
  2. Add 1 teaspoon of mustard seeds to the hot oil and fry until they start to pop, about 30 seconds.
  3. Stir in 2 tablespoons of split urad dal and 1 broken red chile pepper, cooking for 1-2 minutes until the dals are golden brown.
  4. Add 4 cups of finely shredded cabbage to the pan and sauté for 5-7 minutes until tender but crunchy.
  5. Sprinkle in 1 cup of shredded coconut and drizzle with the juice of half a lemon, cooking for an additional 2 minutes.
  6. Remove from heat, garnish with chopped cilantro, and let rest for a minute before serving.
