Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into cubes. Toss with olive oil, salt, and pepper.
  2. Spread the sweet potato cubes in a single layer on a baking sheet lined with parchment paper. Roast for 25-30 minutes, flipping halfway through.
  3. Coat chicken breasts with Cajun seasoning. Heat a skillet over medium-high heat, add olive oil, and cook chicken for 6-7 minutes per side until it reaches 165°F (74°C).
