Preparation
- Preheat your grill to medium-high heat (375°F to 400°F) for about 10 minutes.
- Season salmon fillets generously with Cajun spice blend and marinate for 5-10 minutes.
- In a medium pot, bring 4 cups of broth to a boil. Gradually stir in 1 cup of grits, then reduce heat to low and cook for 5-10 minutes until creamy.
- Stir in 1 diced jalapeno and 1 cup of shredded cheddar cheese into the grits until the cheese melts.
- Place marinated salmon on grill, cooking for about 4-5 minutes per side until cooked through and flaking easily.
- Serve by placing cheesy jalapeno grits on each plate and topping with grilled salmon. Garnish with sliced green onions.
